Chef Mario Espinosa

A Mexico City native, Mario Espinosa is the eighth cook in his family—a lineage that speaks to both privilege and responsibility. His culinary journey began humbly, washing dishes and serving as a kitchen assistant, before rising to work with Enrique Olvera at Pujol, one of the world’s best restaurants. He went on to earn the 2011 Bohemia Distinction award for best contemporary Yucatécan cuisine, the 2013 Travel & Leisure Gourmet Award for Best New Restaurant, and the Millesime Mexico award for Best Young Master.

Chef Espinosa completed a stage at El Celler de Can Roca in Girona, Spain—then considered one of the best restaurants in the world—and has since opened a celebrated portfolio of restaurants across Mexico and Italy, including Madereros in Mexico City, where firewood and its derivatives are the foundation of every dish. At Pink Adobe, he brings this same devotion to fire, smoke, and authentic ingredients to the heart of Santa Fe.

His career includes significant roles as Chef de Cuisine at AguaTinta in Yucatán and as Chef de Partie at the acclaimed Pujol in Mexico City under world-class mentorship. Currently expanding his horizons as a Pastry Chef at Milpa in Osaka, Japan, Chef Trejo’s international experience brings a dynamic global perspective to the kitchen.

Guided by a philosophy of continuous growth and collaboration, Chef Trejo believes in learning from those around him while generously sharing his knowledge with his teams. Together with Chef Espinosa, he brings a dynamic blend of international prestige and emerging talent to Pink Adobe’s kitchen.
